My Most Requested Baked Recipe

Ingredients:

  • 1 loaf of cornbread (crumbled)
  • 1/2 cup butter (melted)
  • 1 small onion (chopped)
  • 2 celery stalks (chopped)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon poultry seasoning
  • 2 cups chicken broth
  • 2 eggs (beaten)
  • 1 cup cooked, shredded chicken (optional)
  • 1/2 cup milk
  • 1 can cream of chicken soup

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a baking dish and set it aside.
  2. In a pan, sauté the onions and celery in butter until soft.
  3. In a large bowl, combine the crumbled cornbread, sautéed veggies, salt, pepper, and poultry seasoning.
  4. Stir in the chicken broth, beaten eggs, milk, and cream of chicken soup. Mix until everything is well incorporated.
  5. Add in the shredded chicken if using.
  6. Pour the mixture into the greased baking dish and bake for 40-45 minutes or until the top is golden brown.
  7. Let it cool slightly before serving. Enjoy!
